Mint Oreo Brownies

My boyfriend Drew and I love baking together. Since he'll only eat homemade baked goods (nothing from restaurants besides Max Brenners!), we like to add a little umph to basic recipes, such as brownies. Some of my favorite flavor combinations are chocolate and coffee and mint chocolate. When I saw the recipe for York Peppermint Patty Brownies on the blog Eat at Allie's (haha coincidence?), I had to try them! Drew and I have made these before, and they're pretty darn good. But the other day I decided to add some Oreo crunch to the recipe for a yummy Mint Oreo Brownie! They turned out reallllll good.

The Eat at Allie's recipe uses a more complicated brownie recipe made from scratch. I cheated and used a boxed brownie mix. I promise they'll still taste just as good! Here's what you'll need:

Betty Crocker Fudge Brownie Mix (or any brand you want!)
2 Eggs or EggBeaters
Vegetable Oil
Butter
1 Bag of York Peppermint Patties
1 Package of Double Stuf Oreos


1. Set the oven to whatever temperature the box says, usually 350 degrees. Mix the brownie batter as directed on the box using the boxed mix, vegetable oil, water and eggs. I used EggBeaters because after I went to the grocery store I realized we didn't have eggs in my house. EggBeaters worked just fine!


2. Pour half of the brownie mix into an 8x11 buttered pan. Make sure the batter is spread to cover the whole pan, spreading with a rubber spatula if needed.



3. Cut up about 12-14 York Peppermint Patties into large chunks and sprinkle them on top of the brownie batter. Break up about 10 Double Stuf Oreos into large chunks and do the same. When you're done it should look like this:



4. Drizzle the rest of the brownie batter evenly on top of the York Peppermint Patties and Oreos.


5. Set the brownies in the oven for about 30 minutes. Originally we put them in for 25 minutes, then another 3 minutes. They were very gooey and probably could've stayed in the oven a bit longer. When done cooking, let the brownies cool. Once cooled, serve on a plate with vanilla or mint ice cream.

And voila!

Once your done eating the warm brownies, place in the fridge. These brownies are very easy to make and so delicious. I made Drew take home half the pan so I wouldn't eat them all! What do you think of these Mint Oreo Brownies? Worth a try?
