Quinoa Veggie Fried "Rice"

I promised I would try one of the recipes from last week's post, and I did! This week I cooked the Quinoa Veggie Fried Rice and it was so so so good and filling. I couldn't even finish half the bowl I served myself (even though it was a heaping pile of quinoa). Check out the pictures:

The recipe tasted just like veggie fried rice except with more vegetables. Good thing that's my favorite part! This quinoa fried "rice" is a lot healthier for you, too. For those of you who have never heard of quinoa, it is a grain-like crop that's actually a seed close to the beetroot, spinach and tumbleweed families. Quinoa is known to be a superfood with a high protein content, unlike some other rices (Source: Quinoa). This is the main ingredient that makes this type of fried "rice" so much better for you, plus it still tastes like a rice grain except with a slightly softer texture.

This recipe is from the blog Damn Delicious. The instructions for the recipe are easy to follow. Although it calls for a lot of prep work, it's definitely worth it and makes a large amount (we still have leftovers in the fridge). Here's what you'll need:
Olive oil
2 Eggs
2 Cloves of garlic
1 Small onion
8 oz. Mushrooms (I don't like mushrooms, so we took these out)
1 Head of broccoli
1 Zucchini
1/2 Cup frozen corn
1/2 Cup frozen peas
2 Carrots, peeled and grated
3 Cups of cooked quinoa
1 Tbs. ginger
3 Tbs. soy sauce
2 Green onions sliced
Sriracha sauce (by far the spiciest sauce ever)
