Triple Berry Pie

In yesterday's post I promised to show pictures and give the recipe for this homemade Triple Berry Pie. My family and I devoured it last night for the 4th of July. It was the most delicious pie I've ever had (and I'm not a pie-lover so that's saying something). I actually want to make another one right now. That's how good it was!
I found this recipe on Emily Schuman's blog Cupcakes and Cashmere. Emily used a recipe from the blog The Way The Cookie Crumbles. Emily's pie looks absolutely perfect. I think the only thing I need to fix the next time I make this pie is the crust. Mine was not as thick. I love graham cracker crust so maybe I'll add a little more graham cracker crumbs.
Despite the fact that there are many steps to the recipe, it is so worth it. The recipe definitely went a lot faster with the help of another person (a.k.a. Drew) though. Here's what you'll need:

9-11 Full graham crackers (I used pre-crumbled graham crackers)
2 Tbs. + 1/2 Cup Sugar
5 Tbs. Unsalted butter
2 cups (9 oz) fresh raspberries
2 cups (11 oz) fresh blackberries
2 cups (10 oz) fresh blueberries
3 Tbs. Cornstarch
1/8 Tsp. Salt
1 Tbs. Lemon juice
2 Tbs. Red currant jelly

Once chilled completely, I served the pie with a touch of whipped cream on top. The pie was so delicious, I'm still wishing I had more. Maybe I'll make another one for the next patriotic holiday...or sooner hehe!
