Homemade Chicken Salad

Part of my preparation for my semester abroad in London is to figure out what the heck I'm going to cook for myself. In Boston I don't have my own kitchen and usually eat in the dining hall, so having to cook on my own is going to be a big change. One of the basic things I do know how to cook, though, is chicken. Chicken is easy to cook and can be stored easily, but it's tough figuring out different ways to eat the chicken other than reheating it or slicing it over a salad.

This afternoon when I was looking for something to eat for lunch, I noticed we had some leftover grilled chicken. Instead of eating the chicken over some spinach and veggies like I normally would, I decided to make it a little more interesting. With my mum's inspiration, I made my own chicken salad!
To make this homemade chicken salad, you'll need:
Cooked chicken
Light mayonnaise
Granny Smith apple
Anything else you want to mix in!

Directions:
  1. Chop the chicken and a slice of a Granny Smith apple into small pieces.
  2. Place the chicken in a small bowl.
  3. Use a fork to mix in as much mayo as you'd like.
  4. Stir in the Granny Smith apple.
  5. Spoon on top of a salad, spread over a slice of wheat bread or eat it on its own.
This homemade chicken salad recipe is fast and easy to make, plus it makes for a pretty filling meal. I like adding the Granny Smith apple because it adds crunch and sweet tart flavor, but you can add anything you'd like to give it some extra kick, such as onion, celery, capers or Craisins. This homemade chicken salad makes for a healthy lunch or dinner that also helps get rid of your leftovers.
