MINT OREO TRUFFLES

After months without a kitchen, it's time to do a recipe post now that I'm home for winter break! These Mint Oreo Truffles are the perfect treat for the holidays and winter festivities--they were certainly a hit at my house. Even if it's not Christmas time, I love peppermint flavors in desserts for winter, and these truffles are full of minty, chocolate-y goodness. The recipe originally came from Sally's Baking Addiction, and it's very simple with only three ingredients: mint Oreos, cream cheese and Baker's chocolate (plus I added a few crushed candy canes as a topping).

What you'll need:
  • 1 package of mint creme Oreos
  • 8 oz cream cheese (softened to room temperature)
  • 12 oz Baker's chocolate for melting (buy a little extra if you can, I was running low towards the end!)
  • Optional: crushed candy cane (about 5) for topping
Directions:
  1. Start by crumbling the Oreos in a food processor until a fine crumb consistency. You'll notice that the frosting is already starting to "glue" the Oreo bits together.
  2. Mix together the processed Oreos and softened cream cheese in a large bowl. 
  3. Roll about 30-35 balls (I had enough Oreo mixture for 34) and place them on a baking sheet covered with parchment paper.
  4. Place the Oreo balls in the freezer for about 30 minutes. This will keep them from crumbling apart when you dip them in the melted chocolate.
  5. Chop the Baker's chocolate and heat in a large bowl as directed on the package. Be sure to heat the chocolate in intervals and stir so that it melts evenly.
  6. Take the Oreo balls out of the freezer and get dipping! In order to cover the truffles in chocolate as neatly as possible, use a fork to flip the Oreo ball around in the chocolate until it is fully covered. Scoop the coated truffle onto the top of the fork prongs and let the excess chocolate drip off before placing back on the parchment paper to harden. The fork trick is a tip from Sally's Baking Addiction that definitely helped my truffles come out much better than last year's.
  7. Place in the refrigerator for about 10-15 minutes to let the chocolate set.
  8. Once hardened, serve to your friends and family and the compliments will come pouring in! These things are too good!
